I came up with this recipe one night after having a taste for Lemon Pepper Chicken during my weight loss program. It turned out great and in the end I lost 40 pounds.

Ingredients
- 2 cans chicken breast, 12 oz.
- 3 - green onions, chopped, including green portion.
- 1/2 cup celery, chopped small.
- 1 1/2 teaspoons poultry seasoning
- 1 1/2 teaspoons course black pepper
- 1 - lemon
- 2- 2 1/2 tablespoons hellmenn's mayonaise with olive oil
How To Make lemon pepper chicken salad

Step 1Directions: Squeeze out as much water as you can from the Chicken Breast and place into a med. Size bowl or container with lid. Grate zest from lemon and add to bowl. Squeeze lemon and add 1/2 of the juice (no seeds please) to the bowl. Add all of the other ingredients and mix well. Add more Lemon juice to taste after chilling if desired. Chill 1-2 hours and serve.
