Keith's Favorite Chicken Salad

I originally came up with this recipe to surprise my husband on his birthday. I studied many, many chicken salad recipes & complied all the best parts into one! I usually serve this will my potato bacon soup & fresh croissants!

chicken breasts, boneless and skinless
1 c
mayonnaise, light (i use kraft w/ olive oil)
1 c
red grapes, halved
1/2 c
walnuts, chopped
egg, hard boiled- whites only, chopped
french fried onions
garlic powder
black pepper
season salt
olive oil, extra virgin


1Rub Chicken breasts with olive oil. Season to taste with season salt, garlic powder, black pepper, and paprika. Bake in oven approx 20-25, or until done, at 350 degrees. This can be done ahead of time to give chicken time to cool before handling it.
2Cube or shred chicken.
3In medium size bowl, mix chicken, mayonnaise, grapes, egg whites, and walnuts. Top with french fried onions. (The amount of french fried onions you use is totally up to you.)
