We have always eaten a basic chicken salad. That's what we like. I thought, what can I do to boost flavor without adding too many ingredients? I love Italian seasoning & garlic, so I baked it off in the oven to perfect doneness, so the chicken was still moist. Loved this on crackers too! Simple idea, but super flavor!

Ingredients

  • 2
    chicken breasts, boneless and skinless
  • 1 Tbsp
    italian seasoning
  • 1 Tbsp
    garlic salt
  • 1/2 tsp
    black pepper
  • 3 stalk(s)
    celery, diced small
  • 1 medium
    sweet onion, diced small
  • 3/4-1 c
    hellmans mayo

How to Make Italian Chicken Salad

Step-by-Step

  1. Preheat oven to 350 degrees.
  2. Pound out thick part of chicken to same thickness as the smaller end for even cooking.
  3. Season both sides of chicken . Put in a foil lined baking dish & bake for 25-30 minutes until done. Allow to cool, before cutting into small cubes.
  4. In a medium bowl, mix all ingredients well. Refrigerate until well chilled. Serve your favorite way. Enjoy!
