Such a refreshing and easy chicken salad for a warm summer evening.

    2 cups cooked chopped chicken or turkey
  • ·
    1/2 cup coconut
  • ·
    1/4 cup chopped nuts
  • ·
    1/2 cup crushed pineapple, drained
  • ·
    1/2 to 3/4 cup mayonnaise or salad dressing
  • ·

How to Make Hawaiian Chicken Salad


  1. In medium bowl, mix all ingredients except lettuce. Blend well; chill. spoon onto lettuce
  2. . Garnish as desired with additional nuts, pineapple or parsley. Tip: 2 cans tuna, drained, (7 oz. each) may be substituted for the chicken. Salad may also be used as a sandwich filling.
    Serves 4
