Cold chicken salad, Hawaiian style, with the flavors of pineapple, mango, and macadamia nuts. Easily made with leftover cooked chicken.

Ingredients

  • 1 pound smoked chicken or grilled chicken
  • 8 ounces can crushed pineapple
  • 1 cup diced celery
  • 2 ounces jar diced pimiento peppers, drained
  • 1/4 cup mango chutney
  • 1/2 cup mayonnaise
  • - salt and black pepper to taste
  • 1/2 cup macadamia nuts, chopped
  • 1 tablespoon fresh italian parsley, minced

How To Make hawaiian chicken salad

  • Step 1
    Chop chicken into chunks. I use leftover smoked or grilled chicken from the barbecue, but rotisserie is also fine.
  • Step 2
    Stir chicken up with the rest of the ingredients and serve.
