Ingredients
- 2 cups chicken breasts, cooked and cubed
- 1/2 cup green onions, sliced
- 1 cup snow peas, julienned
- 1 can bean sprouts
- 1 cup mushrooms, thinly sliced
- 2 tablespoons soy sauce, low sodium
- 2 tablespoons ginger, freshly minced
- 1 tablespoon oil
- 1/2 teaspoon sesame oil, optional
- 1/3 cup lemon juice
- 1 - garlic clove, minced
- 1 - watercress bunch
How To Make gingered chicken salad

Step 1Place the chicken, green onions, peas, bean sprouts and mushrooms in a large bowl.

Step 2Combine the soy sauce, ginger, oil, sesame oil, lemon juice and garlic and toss with the chicken mixture.

Step 3If desired, transfer to a bed of lettuce on a serving platter and arrange watercress around it.
