  • 2 c
    chicken breasts, cooked and cubed
  • 1/2 c
    green onions, sliced
  • 1 c
    snow peas, julienned
  • 1 can(s)
    bean sprouts
  • 1 c
    mushrooms, thinly sliced
  • 2 Tbsp
    soy sauce, low sodium
  • 2 Tbsp
    ginger, freshly minced
  • 1 Tbsp
  • 1/2 tsp
    sesame oil, optional
  • 1/3 c
    lemon juice
  • 1
    garlic clove, minced
  • 1
    watercress bunch

How to Make Gingered Chicken Salad


  1. Place the chicken, green onions, peas, bean sprouts and mushrooms in a large bowl.
  2. Combine the soy sauce, ginger, oil, sesame oil, lemon juice and garlic and toss with the chicken mixture.
  3. If desired, transfer to a bed of lettuce on a serving platter and arrange watercress around it.
