1Prheat oven to 375 degrees and place olive oil in 9-inch oven safe skillet (recommend cast iron) and place skillet in oven for 5 minutes. While skillet preheating remove chicken from package and cut up mango and avocado. When skillet done place chicken in skillet and cook 7-9 minutes on each side until internal thermometer reads 180 degrees. Remove and cut up chicken into bite size pieces. Add mango, avocado, tomatoes, almonds, and cheese and return to oven for 5 minutes. Serve immediately. Yields 4 servings.
