My Mother told me as a newly wed,she went to a luncheon where they served curried chicken salad. In those days (1949) that was a fancy dish,she loved it and made it often . I like to serve this salad scooped in a large lettuce leaf. You can substitute turkey for the chicken,very tasty too.

Ingredients

  • - 3 c cooked chicken,chopped
  • - 1 1/2 c mayonnaise
  • - 2 t lemon juice
  • - 1/4 c mango chutney
  • - 3 t. curry powder
  • - 1 c celery, thinly sliced
  • - 1/4 c green onions,chopped
  • - 1/4 c raisins
  • - 1 c roasted,salted cashews

How To Make curried chicken salad

  • Step 1
    For the dressing, combine the mayonnaise, lemon juice, chutney, curry powder, and 1 1/2 teaspoons salt in the bowl of a food processor fitted with the steel blade. Process until smooth. Combine the chicken with enough dressing to moisten well. Add the celery, scallions, and raisins, and mix well. Refrigerate for a few hours to allow the flavors to blend. Add the cashews and serve at room temperature.
