One of the best chicken salads you'll ever have! Time does not include chilling time of 4-6 hours.

Ingredients

  • 3/4 cup mayonnaise
  • 1/3 cup major gray's chutney
  • 1/2 teaspoon curry powder
  • 1 teaspoon grated lime zest
  • 2 tablespoons fresh lime juice
  • 1/4 teaspoon kosher salt
  • 2 cups cooked chicken breast, diced
  • 1 can (13.25 oz) pineapple chunks or tidbits,, drained
  • 1 cup celery, sliced diagonally
  • 1/2 cup green onions, thinly sliced
  • 1/4 cup blanched sliced almonds, toasted

How To Make curried chicken salad

  • Step 1
    In a large bowl, combine mayonnaise, chutney, curry, lime peel and juice, and salt.
  • Step 2
    NOTE: If there are fruit chunks in the chutney, slice them as thinly as possible.
  • Step 3
    Blend well, and then gently fold in the remaining ingredients. Chill 4-6 hours or overnight.
  • Step 4
    Note: If preparing the night before, be sure to toss again before serving - as all the juices will have settled to the bottom.
  • Step 5
    Serve atop salad greens. But this is also great in a croissant or brioche sandwich.
