Ingredients

  • 1 package salad greens
  • 1 large red or green pepper
  • 1 large avacado
  • 1 medium onion
  • 4 small chicken breasts, boneless and skinless
  • 1 bottle balsamic vinegarette dressing
  • 1 cup panko bread crumbs (seasoned)
  • 1/4 cup olive oil / grapeseed oil

How To Make crunchy chicken salad

  • Step 1
    Pre-heat oil in skillet on low-medium heat.
  • Step 2
    Dip moist chicken breast into panko bread crumbs and coat well. Cook coated chicken breast in skillet until golden brown on both sides.
  • Step 3
    Toss salad greens, red or green pepper, avacado, onion in bowl.
  • Step 4
    Once chicken breast are done, cool and slice and arrange over individual salads.
  • Step 5
    Finish with balsamic vinegrette dressing (such as Newman's Own).
