Lemon and summer seem to go together well, don't they? This salad sounds light and refreshing with just the right amount of pucker power. I'm going to try it real soon. Let me know if you try it and like it! Enjoy.

Ingredients

  • 1/2 c
    mayonnaise dressing
  • 2 Tbsp
    basil, fresh chopped
  • 1 Tbsp
    lemon juice
  • 1 tsp
    lemon peel, grated
  • 2 c
    chicken, cooked and chopped
  • 1 c
    grapes, halved
  • 1/2 c
    chinese pea pods, halved
  • 1/2 c
    red onion, thinly sliced

    lettuce leaves

How to Make Cool Lemon Chicken Salad

Step-by-Step

  1. Mix dressing, basil, juice and peel in large bowl.
  2. Add remaining ingredients, mix lightly; refrigerate.
  3. Serve on lettuce-lined platter.
