    1/4 cup olive oil
  • ·
    3 tbsp. rice wine vinegar
  • ·
    2 tbsp. sugar
  • ·
    1 tsp. sesame oil
  • ·
    1 tsp. salt
  • ·
    1/2 tsp. cracked pepper
  • ·
    8 oz. cooked chicken breast, shredded, about 3 chicken breasts
  • ·
    shredded lettuce
  • ·
    2 oz. chow mein noodle
  • ·
    3 green onions, chopped
  • ·
    2 tbsp, chopped almonds, toasted
  • ·
    1 tbsp. sesame seeds, toasted

How to Make Chinese Chicken Salad


  1. Whisk olive oil, vinegar, sugar, sesame oil, salt and pepper in a bowl. Toss the chicken, lettuce and olive oil mixture in a salad bowl until coated. Add noodles, green onions, almonds and sesame seeds and mix well. Serve at once. Serves 2
