There are so many variations of this salad, and this recipe is a conglomeration of several.

Ingredients For chinese chicken salad

  • DRESSING
  • 1/4 c
    low sodium soy sauce
  • 1/4 c
    freshly squeezed lemon juice
  • 2 Tbsp
    seasoned rice vinegar
  • 1 tsp
    dry mustard
  • 1 Tbsp
    sesame oil
  • 1/4 c
    avocado oil or other neutral oil
  • 2 Tbsp
    granulated sugar
  • salt and pepper, to taste
  • SALAD
  • 1 lg
    head romaine lettuce, shredded
  • 2 c
    shredded Napa cabbage
  • 1/2 lb
    snow peas, julienned
  • 1/2 c
    sliced green onions
  • 1/2 c
    radishes, thinly sliced
  • 1/2 c
    cilantro, chopped
  • 2 c
    cooked chicken, diced or shredded
  • 1/2 c
    sliced almonds, toasted
  • 1 Tbsp
    sesame seeds, toasted
  • 1 c
    wonton strips

How To Make chinese chicken salad

    To make the dressing, add the soy sauce, lemon juice, vinegar and mustard to a small bowl. Whisk to combine. While continuing to whisk, slowly stream in the sesame oil and avocado oil. Add sugar and whisk until the sugar is completely dissolved. Season with salt and pepper to taste. Set aside.

    To make the salad, add romaine, cabbage, snow peas, green onions, radishes, and cilantro to a large bowl and toss.

    Add the chicken to the bowl. Give the dressing a quick whisk, then add to the bowl. Toss to coat all ingredients.

    When ready to serve, add the toasted almonds, sesame seeds, and won ton strips. Toss gently to combine. Serve immediately.
