chicken wedge salad for two

This was a Betty Crocker recipe that I've adapted for two and to our taste. There is no prep time if you buy pre-cooked chicken strips and pre-cooked bacon. You could also use bacon bits instead. I like to cut the other half of the apple in two and each have a piece as a sort of appetizer.

Ingredients For chicken wedge salad for two

  • 3 slice
    bacon, cooked, crumbled
  • 1/4 c
    mayonnaise
  • 2 Tbsp
    yogurt, plain
  • 3/4 Tbsp
    red wine vinegar
  • 1/4 c
    blue cheese, crumbled
  • 2 oz
    cooked chicken breast strips
  • 1/2
    apple, chopped
  • 1
    head of iceburg lettuce

How To Make chicken wedge salad for two

    Mix mayo, yogurt, vinegar, and and blue cheese crumbles to make dressing.
  • 2
    Place a wedge on each plate and surround it with chicken and apple bits.
  • 3
    Drizzle with blue cheese dressing and bacon crumbles.
