Ingredients

  • 1/2 cup reduced fat mayonnaise
  • 3 tablespoons fresh lemon juice
  • 1/2 teaspoon coarse salt
  • 1/4 teaspoon ground pepper
  • 1/2 - cooked roast chicken, chopped or shredded
  • 2 - golden delicious apples, peeled, thinly sliced (i chop them for sandwiches)
  • 3 - thinly sliced celery stalks
  • 1/2 cup coarsely chopped toasted walnuts
  • - lettuce leaves, for serving

How To Make chicken waldorf: chicken salad w/ apples & walnuts

  • Step 1
    In a large bowl, whisk together mayonnaise, lemon juice, salt, and pepper.
  • Step 2
    Shred meat, and add to dressing. Add apples, celery, and walnuts.
  • Step 3
    Serve over a bed of lettuce or serve as a sandwich.
