Chicken Waldorf: Chicken Salad w/ Apples & Walnuts

1/2 creduced fat mayonnaise
3 Tbspfresh lemon juice
1/2 tspcoarse salt
1/4 tspground pepper
1/2cooked roast chicken, chopped or shredded
2golden delicious apples, peeled, thinly sliced (i chop them for sandwiches)
3thinly sliced celery stalks
1/2 ccoarsely chopped toasted walnuts
·lettuce leaves, for serving
How to Make Chicken Waldorf: Chicken Salad w/ Apples & Walnuts
- In a large bowl, whisk together mayonnaise, lemon juice, salt, and pepper.
- Shred meat, and add to dressing. Add apples, celery, and walnuts.
- Serve over a bed of lettuce or serve as a sandwich.
