Ingredients
- 1/2 cup reduced fat mayonnaise
- 3 tablespoons fresh lemon juice
- 1/2 teaspoon coarse salt
- 1/4 teaspoon ground pepper
- 1/2 - cooked roast chicken, chopped or shredded
- 2 - golden delicious apples, peeled, thinly sliced (i chop them for sandwiches)
- 3 - thinly sliced celery stalks
- 1/2 cup coarsely chopped toasted walnuts
- - lettuce leaves, for serving

Step 1In a large bowl, whisk together mayonnaise, lemon juice, salt, and pepper.

Step 2Shred meat, and add to dressing. Add apples, celery, and walnuts.

Step 3Serve over a bed of lettuce or serve as a sandwich.
