- BATTER INGREDIENTS
- 2 ounces chipolte peppers, canned
- 2 eggs
- 2 cups Mexican beer
- 2 cups all-purpose flour
- 2 tablespoons corn starch
- 2 teaspoons baking powder
- salt and pepper to taste
- MEAT
- 3 chicken breasts
- canola oil for deep frying

- salad greens
- cherry tomatoes

How To Make chicken tender salad

Step 1Puree chipotles and egg together in a food processor. When well blended transfer to a bowl and whisk in beer.

Step 2In a separate mixing bowl combine flour, cornstarch, baking powder and salt. Add egg mixture to flour mix, whisk well to prevent clumps. Add freshly ground pepper. Set aside while preparing chicken.

Step 3Cut chicken breasts into strips. Dip into batter and fry in at least 4\" of hot canola oil.

Step 4Assemble salad and place chicken on top.
