Ingredients

  • BATTER INGREDIENTS
  • 2 ounces chipolte peppers, canned
  • 2 - eggs
  • 2 cups mexican beer
  • 2 cups all-purpose flour
  • 2 tablespoons cornstarch
  • 2 teaspoons baking powder
  • - salt and pepper to taste
  • MEAT
  • 3 - chicken breasts
  • - canola oil for deep frying
  • SALAD INGREDIENTS
  • - salad greens
  • - cherry tomatoes
  • - green onions

How To Make chicken tender salad

  • Step 1
    Puree chipotles and egg together in a food processor. When well blended transfer to a bowl and whisk in beer.
  • Step 2
    In a separate mixing bowl combine flour, cornstarch, baking powder and salt. Add egg mixture to flour mix, whisk well to prevent clumps. Add freshly ground pepper. Set aside while preparing chicken.
  • Step 3
    Cut chicken breasts into strips. Dip into batter and fry in at least 4\" of hot canola oil.
  • Step 4
    Assemble salad and place chicken on top.
