This was a Betty Crocker recipe that I've adapted for two and to our taste. Try this over pasta or rice instead of salad. Try different salad mixes. Try different sauces. What is your favorite?

Ingredients

  • 6 ounces cooked chicken strips
  • 1/3 cup thai peanut sauce
  • 1/2 bag mixed salad greens
  • 1/2 cup carrots, julienne
  • 1/3 cup cilantro, fresh, chopped

How To Make chicken satay salad for two

  • Step 1
    In microwave bowl, mix chicken and sauce. Cover and microwave 1 - 2 minutes, (depending on your oven) until hot.
  • Step 2
    Divide salad and carrots onto serving dishes.
  • Step 3
    Top with chicken and cilantro.
