very refreshing and different from a regular chicken salad that is laden with Mayo, the fruit really gives it great flavor and the nuts give it a crunch.

Ingredients

  • 6 cups cooked chicken breast, chopped or in a food processor
  • 2/3 cup chopped dried cranberries
  • 1 stalk celery, chopped
  • 8 oz - cream cheese, softened
  • 8 oz cans crushed pineapple, drained
  • 1/2 cup mayonnaise
  • 1 cup chopped walnuts or almonds
  • 1 cup white grapes, sliced
  • - salt and pepper to tast

How To Make chicken salad

  • Step 1
    mix all ingredients together, chill and serve over lettuce.
  • Step 2
    I used 6 boneless, skinless chicken breasts. and have made it with red seedless grapes also. choose what you love and make it your own.
