I really had trouble finding a simple chicken salad I liked so this is the one I put together with the things I like. So I hope you all enjoy it, It is very easy to make. You can always use deli chicken for different taste and make it even easier.

Ingredients

Add to Grocery List

3 c
cooked chicken--cubed
1/2 c
water chestnuts (rinse well)
1 1/2 c
red or green grapes (seedless)
1 1/2 c
pineapple tidbits
1/2 c
apple (chopped)
1 pkg
almonds, slivered--lightly toasted
1 c
chow mein noodles--the crunchie ones
mayonnaise
salt and pepper to taste

How to Make Char's Chicken Salad

Step-by-Step

  • 1Add chicken cubed to the size you like, add water chestnuts I like to quarter them,cut the grapes in half then add drain pineapple but reserve the juice and add chopped apple. I then add some of the juice to the mayo to a consistency you like and I add the salt and pepper to this so the seasoning coats all the ingred. then chill Add lightly toasted almonds and chow mein noodles about 45 min before serving so they don't get soggy. You may need to add a little more dressing at this time. Your choice on that. May serve on a bed of lettuce, or stuff a tomato or anyway you like. This also makes a wonderful sandwich spread just chop everything finer. Enjoy!!!
