we have just salad for a meal sometimes and this is a great one

  • 1/2 c
  • 1/4 c
    barbecue sauce
  • 2 Tbsp
    grated onion
  • 1 Tbsp
    lemon juice
  • 1/2 tsp
    black pepper
  • 2 large
    tomatoes, chopped
  • 8 c
    torn leaf lettuce or iceberg lettuce
  • 2
    eggs, hard boiled. sliced
  • 3 c
    chopped cooked chicken
  • 10 slice
    bacon, cooked and crumbled

How to Make BLT Chicken Salad


  1. combine first 5 ingredients in a small bowl, stir well. cover dressing and chill thoroughly.
  2. press chopped tomatoes between several layers of paper towels to remove excess moisture.
  3. arrange lettuce on indevidiual salad plates, top each serving with egg slices, tomatoes and chicken.
  4. spoon dressing over salad, sprinkle with crumbled bacon. serve salad immediately.
