This recipe was inspired by a deli back in my hometown. They made a yummy chicken salad, with mayo and artichokes, that was very popular. So, I decided to recreate it with my own twist, and I think it's even better than the original. The salad is a combination of slightly smoky grilled chicken, tangy seasoned & marinated artichoke hearts and a mayo salad dressing. It's quick and easy, yet elegant and divinely delicious; perfect for a special lunch, brunch buffet or busy-day dinner. Use it to stuff tomatoes, as an appetizer on crackers or party bread rounds, or simply on a bed of lettuce. Yum!

Ingredients

  • 2 1/2 cups grilled chicken, chopped (see *note)
  • 1/4 teaspoon salt
  • 1 jar marinated artichoke hearts, drained & chopped (14 oz.)
  • 3/4 cup miracle whip salad dressing

How To Make basic artichoke chicken salad

  • Step 1
    *NOTE: You may use grilled, rotisserie or roasted chicken or turkey meat (any part/s of the bird,) though grilled has the best flavor, in my opinion.
  • Step 2
    Gather and prep all ingredients (remove skin, debone and chop chicken; drain artichokes and chop after removing any tough outer leaves.)
  • Step 3
    Add chicken to an average size mixing bowl; sprinkle with 1/4 tsp salt; toss to distribute salt.
  • Step 4
    Add Miracle Whip salad dressing; mix with large spoon to coat chicken well.
  • Step 5
    Add chopped artichokes; mix well.
  • Step 6
    Serve immediately, as desired, or cover and refrigerate until served. Cover and refrigerate any leftovers.
