- 3 cups cut-up cooked chicken (or turkey)
- 1-15oz can Red Kidney Beans, rinsed & drained
- 1 cup Pineapple Chunks
- 3 - bananas, small, sliced
- - Lettuce leaves
- 1/4 cup Fresh Lemon Juice
- 1/4 cup Olive Oil
- 2 tablespoons Chopped Canned Green Chilies
- 1 tablespoon Chopped Pimento
- 2 tablespoons Chopped Parsley
- 3/4 teaspoon Salt
- 1/4 teaspoon Dry Mustard

Step 1In large bowl combine chicken, Kidney beans, pineapple and sliced bananas. Toss with Green Chili Dressing. Serve on Lettuce leaves.

Step 2GREEN CHILI DRESSING: Mix lemon juice and next 6 ingredients in small bowl. Let stand 1 hour or longer for flavors to blend.
