This was a Betty Crocker recipe that I've adapted for two and to our taste.

You may wish to garnish. Betty Crocker suggests basil.

Try different dressings and different herbs. Let me know what is your favorite!

  • 1 c
    cherry or grape tomatoes, halved
  • 6 oz
    grilled chicken strips
  • 1/4 c
    balsamic vinegarette dressing
  • 6
    romaine lettuce leaves

How to Make Balsamic - Mozzarella Chicken Salad for Two


  1. Stir cheese, tomatoes, and chicken.
  2. Drizzle the dressing.
  3. Place three lettuce leaves attractively on a plate.
  4. Spoon salad mix onto the leaves.
