With my son having lived out of the U.S. he acquires new recipes. This one sounds real good. I really like his stuffed dates wrapped in bacon. So, I'm sure this is good also. The combination pretty much speaks for itself.

Ingredients

  • 8 c
    cubed, cooked chicken
  • 2 c
    water chestnuts, sliced
  • 3 c
    pineapple chunks
  • 2 c
    fresh red seedless grapes
  • 2 c
    dates, chopped
  • 2 c
    chopped nuts
  • 2 1/2 c
    mayonnaise dressing
  • 1/2 c
    chicken broth
  • 1 tsp
    curry powder
  • 2 tsp
    soy sauce

How to Make A DIFFERENT KIND OF CHICKEN SALAD

Step-by-Step

  1. In a large bowl combine ingredients. In a small bowl, mix mayonnaise, chicken broth, curry powder and soy sauce. Mix enough sauce in chicken salad to combine and moisten to stick together. Serve over lettuce in individual serving dishes. Serve with your choice of crackers.
