Ingredients For '9os style chicken salad

2skinless, boneless, chicken breast halves

4chicken thighs, skinless and boneless

3 cchicken broth
-
5 tspcurry powder, divided

11 ozmandarin oranges, drained

1/2 cunsalted cashew halves
-
1/2 cpitted dates
-
2 tspred pepper, diced
-
1 cmandarin orange yogurt
-
1/2 creduced-calorie mayonnaise
-
1/4 cflaked coconut
-
1/4 cchutney, finely chopped

lettuce cups
How To Make '9os style chicken salad

1In deep saucepan, place chicken.

2Add broth and 4 teaspoons of the curry powder. Cover and simmer about 30 minutes or until chicken is fork tender.

3Remove from heat and allow chicken to cool in broth. When cool, separate meat from bones. Discard bones and broth.

4Cut chicken in bite-size pieces. In large bowl, place chicken, oranges, cashew halves, dates and red pepper; set aside.

5In a small bowl, make dressing by mixing together yogurt, mayonnaise, coconut, chutney and the remaining teaspoon of curry powder; blend well.

6Fold yogurt dressing into chicken- orange mixture. Arrange lettuce cups on large platter. Fill with salad; garnish with flaked coconut and chopped cashews.

7NOTE: Plain orange or lemon yogurt may be substituted.
