Ingredients
- 2 tablespoons chopped fresh parsley or 2 tsp dried
- 2 tablespoons red wine vinegar
- 2 teaspoons dijon mustard
- 1 teaspoon grated white horseradish
- 1/4 cup vegetable oil, i use canola
- 1/2 teaspoon sugar
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 1 1/2 pounds thick sliced roast beef from the deli, cut into 1 inch strips
- 1 small tomato, chopped
- 1 - shallot, thinly sliced
How To Make roast beef salad

Step 1Combine everything except beef, tomato and shallot in a large bowl.

Step 2Add the beef, tomato and shallot (i use a green onion since can't find shallots here) toss to coat well

Step 3I like to let this sit in the fridge for the day. Store bought roast beef makes this so easy to whip up. I try to catch a time to make it when the deli has the beef on sale.
