Cool and tasty in the hot summer time. I like this as a small sandwich.

Ingredients

  • 2 Tbsp
    chopped fresh parsley or 2 tsp dried
  • 2 Tbsp
    red wine vinegar
  • 2 tsp
    dijon mustard
  • 1 tsp
    grated white horseradish
  • 1/4 c
    vegetable oil, i use canola
  • 1/2 tsp
    sugar
  • 1/4 tsp
    salt
  • 1/8 tsp
    pepper
  • 1 1/2 lb
    thick sliced roast beef from the deli, cut into 1 inch strips
  • 1 small
    tomato, chopped
  • 1
    shallot, thinly sliced

How to Make Roast Beef Salad

Step-by-Step

  1. Combine everything except beef, tomato and shallot in a large bowl.
  2. Add the beef, tomato and shallot (i use a green onion since can't find shallots here) toss to coat well
  3. I like to let this sit in the fridge for the day. Store bought roast beef makes this so easy to whip up. I try to catch a time to make it when the deli has the beef on sale.
