"This famous Viennese cake is a dense, dry chocolate cake. Each layer is spread with a thin layer of apricot glaze, and the cake is topped with chocolate ganache. When I first tasted this torte its dryness was a surprise, but I soon learned to love it. It is meant to be dipped into fresh whipped cream, which moistens it. TORTE:
10 ounces bittersweet chocolate, finely chopped
1 cup sugar
2/3 cup unsalted butter, softened
8 eggs separated
2 teaspoons vanilla extract
1 1/3 cups all-purpose flour
