This cookie recipe is very tasty. It's especially good when you're using fresh zucchini.

Ingredients

3/4 C. butter, softened
1 egg
1 1/2 C. grated zucchini
2 tsp. baking powder
1/2 tsp. salt
1 C. semi-sweet chocolate chips
1 1/2 C. sugar
1 tsp. vanilla
2 1/2 C. flour
1 tsp. cinnamon
1 C. chopped nuts
1 C. chocolate icing

How To Make russ's zucchini cookies

Step 1

Cream butter and sugar. Beat in egg and vanilla. Mix in zucchini. Stir in flour, baking powder, salt and cinnamon. Stir in nuts and chocolate chips. Drop by heaping teaspoon onto greased cookie sheet. Bake at 350 degrees for 15 minutes. Let cool completely. Spread icing over top of cookies.
