Russ's German Potato Salad
- 2 1/2 C. water
- 1/3 C. cider vinegar
- 1 Tbs. salt
- 1/2 C. sugar
- 3 Tbs. cornstarch
- 1/2 C. bacon, diced (with drippings)
- 1/2 C. onions, diced
- 1/2 C. green peppers, diced
- 1 Tbs. parsley
- 1/4 tsp. pepper
- 5 lbs. cooked potatoes (may be sliced)
How to Make Russ's German Potato Salad
- 1Place 2 cups water, vinegar, salt and sugar in a saucepan. Heat to boiling.
Mix cornstarch and 1/2 cup of water, add to saucepan mixture and boil until thickened.
Stir in bacon.
Add cooked potatoes. Stir.
Add onion, green peppers, parsley, and additional salt and pepper to taste.
