How to Make Russ's Dilly Beans
- 1Blanch beans for 2-4 minutes then plunge beans into ice cold water. Change water if necessary to keep beans very cold while preparing.
- 2Stand beans on end in sterilized pint jars, trimming as necessary. To each pint, add 1 clove garlic, 1 head of dill, and 1 tablespoon of salt. Bring water and vinegar to a boil.
- 3Ladle hot liquid over beans, leaving 1/4-inch headspace. Remove air bubbles. Adjust two-piece caps. Process pints and quarts 10 minutes in a boiling-water canner. Let age for two weeks for flavor to develop.
