Ingredients For russ's dilly beans

  • 2 lbs. fresh green beans
  • 4 garlic cloves
  • 4 dill heads
  • 4 Tbs. canning salt
  • 2 1/2 C. water
  • 2 1/2 C. vinegar

How To Make russ's dilly beans

    Blanch beans for 2-4 minutes then plunge beans into ice cold water. Change water if necessary to keep beans very cold while preparing.

    Stand beans on end in sterilized pint jars, trimming as necessary. To each pint, add 1 clove garlic, 1 head of dill, and 1 tablespoon of salt. Bring water and vinegar to a boil.

    Ladle hot liquid over beans, leaving 1/4-inch headspace. Remove air bubbles. Adjust two-piece caps. Process pints and quarts 10 minutes in a boiling-water canner. Let age for two weeks for flavor to develop.
