1 Coyote Squash
2 carrots
1/2 cup salsa, no sugar added
1 cup sweet potato crunchies, recipe for sweet potato crunchies
Directions
Peel all vegetables and dice. In a medium mixing bowl, toss vegetables to combine. Add 1/4 recipe to salad plate, top with 2 tablespoons salsa and 1/4 cup sweet potato crunchies.
