INGREDIENTS
For the Aromatic Brine
7 quarts water
2 cups kosher salt
1 cup brown sugar
2 medium onions, quartered
1⁄2 cup celery scraps (leaves and small stems)
6 garlic cloves, crushed
4 sprigs fresh thyme
6 fresh bay leaves
2 tablespoons whole coriander seeds
2 tablespoons whole black peppercorns
1 tablespoon fennel seeds
1 gallon ice
1 (18-pound) turkey, brined (see above)
1 cup (2 sticks) butter
Leaves from 4 sprigs fresh sage
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
