2 lbs tomatillos, husked and cut in half

2 medium Anaheim or Poblano chili peppers (~8-10 ounces in weight), cut in half and seeded (keep the seeds if you want the heat) - The poblano is a tad milder.

1 large yellow Vidalia onion, cut in large chunks

3 cloves garlic
•
1 small jalapeno, cut in half and seeded (keep the seeds if you want the heat)

1 lime, juice ~1/8 cup juice
•
Zest of one lime
•
1/8-1/4 cup white sugar
•
1 1/2 tsp kosher salt
•
1 tsp black pepper
•
1/2 cup rough chopped cilantro
•
1 1/2 tsp cumin
