4-6 bone-in, skin on chicken breasts

3 tbsp. olive oil

1 tsp. ground coriander

1 tsp. ground cumin

1 tsp. ground turmeric

1 tsp. ground cayenne

1 tbsp. curry powder or garam marsala

1 tbsp. sweet paprika
•
1 cup unsweetened, full-fat coconut milk (I use Thai Kitchens, and I blend it first so that it is no longer separated)

Juice of 1 lemon
•
4 cloves garlic, minced
•
1 tbsp. freshly grated ginger
