INGREDIENTS
1 (2 1/2-pound) boneless pork shoulder
1 1/2 teaspoon kosher salt, divided
1 1/2 teaspoon ground black pepper, divided
1/4 cup bacon drippings
1 large sweet onion, sliced
1 yellow bell pepper, seeded and sliced
6 cloves garlic, smashed
1/4 cup dry white wine
2 cups assorted olives,* pitted
1/4 cup fresh oregano leaves
