4 pears, any type (8 pears, if you use the seckel variety)
2 tablespoons lemon juice
1 tablespoon sugar
2 tablespoons water
2 tablespoons unsalted butter
For the mascarpone cream
1 cup whipping cream
1 vanilla bean
1 cup mascarpone
1/4 – 1/3 cup sugar
2-3 tablespoons espresso, chilled
For finishing
cocoa powder
toasted ground almonds
