1 medium onion cut into wedges

2 cloves of minced garlic
•
3 tablespoon olive oil (divided 2 tbsp & 1 tbsp)
•
4 tablespoon Jamaican jerk seasoning (divided in half)
•
2 tablespoon cider vinegar
•
1 teaspoon thyme (divided in half)
•
1 teaspoon hot sauce, optional
•
1/2 teaspoon red pepper flakes, optional
•
salt and pepper to taste
