1 lb Brussels sprouts, trimmed and halved
2 large tart-sweet apples, like Fuji or Pink Lady
1/2 of a red onion, peeled, halved, and sliced thinly
2 Tbsp of avocado oil
1 Tbsp freshly squeezed lemon juice
1/4 tsp sea salt
1/8 tsp cracked black pepper
4 oz of smoked gouda cheese, grated
