2 sweet potatoes, peeled and cut in large dice

1 package quinoa (about 1 cup)
•
2-4 tablespoons fresh basil
•
1/4 large red onion, diced VERY small
•
salt & pepper
•
1/2 cup olive oil, to use in 3 places
•
3 tablespoons mustard
•
1 tablespoon apple cider vinegar
•
optional: handful of dried cranberries or raisins
•
optional: handful of toasted almonds
