INGREDIENTS
1 large head cauliflower (about 1 pound total)
4 tablespoons (1/2 stick) unsalted butter
1/4 cup all-purpose flour
1/8 teaspoon fine sea salt
2 cups whole milk
10 ounces Cheddar cheese or similar, grated (about 1 1/4 cup)
