"This roasted beet salad can be made with a combination of red and gold beets, if you can find them. It's dressed with a simple vinaigrette and garnished with candied bacon. Eastern Europeans, particularly Poles, Russians, Ukrainians, Lithuanians, Czechs and Slovaks, are fond of both beets and bacon -- a match made in heaven! INGREDIENTS
Beets:
1 1/2 pounds total red and gold beets
2 tablespoons extra-virgin olive oil
1/2 teaspoon salt
Sea salt
Vinaigrette:
3 tablespoons extra-virgin olive oil
2 tablespoons red-wine vinegar
2 tablespoons balsamic vinegar
2 tablespoons fresh lemon juice
2 tablespoons grainy mustard
2 tablespoons honey
2 teaspoons finely chopped garlic
1 teaspoon sugar
1/4 cup finely chopped basil
Salt and pepper
Salad:
8 cups mixed salad greens of choice
Garnish:
4 tablespoons crumbled Bulgarian feta or kashkaval cheese
12 strips Candied Bacon
