INGREDIENTS
the filling:
• 1¼ pound small beets, peeled and cut in a similar size to the onions
• 1¼ to 1½ pounds small to medium red onions, cut into quarters
• 2 tablespoons olive oil, divided
• 4 sprigs of thyme
• ¼ cup brown sugar
• ¼ cup balsamic vinegar
• Sea salt
• Freshly ground black pepper
• 2 ounces hard goat cheese, Pecorino, or Parmesan
For the pastry:
• ¾ cup cake flour, plus extra for dusting
• ¾ cup whole-wheat flour
• Pinch of salt
• ¾ cup butter, cut into small cubes
• ⅓ cup ice-cold water
• 2 teaspoons melted butter or 1 beaten egg
