INGREDIENTS
For Roasted Broccoli:
1½ pounds broccoli - about 2 medium size heads of broccoli - cut into small pieces
2 tbs olive oil
6 twists of black pepper
2 cloves of garlic - minced or put through a garlic press
For the Rice Pilaf:
1 medium onion - diced
2 celery stalks - diced
2 cloves of garlic - minced or put through a garlic press
2 Tbs olive oil
1 cup of basmati rice
½ tsp dried thyme
1¾ cups of vegetable broth
¾ cup slivered almonds
½ cup fresh parsley - minced
