INGREDIENTS
FOR THE RHUBARB BREAD
1 1/2 cups all-purpose flour
1 tsp. baking soda
1 egg
1/4 tsp. salt
1 cup brown sugar
1/2 cup buttermilk or 1/2 cup buttermilk including 2 tsp. vinegar)
1/4 cup vegetable oil
1 tsp. vanilla extract
2 cups fresh or * frozen/thawed rhubarb
1/2 cup chopped pecans
FOR THE GLAZE (Optional)
1 cup icing sugar (confectioners' sugar)
4 tsp. lemon juice (add more if needed to attain desired consistency)
