Red Velvet Cupcakes

"They're just too hard—and fiery red—not to love...."

INGREDIENTS
2 c. all-purpose flour
1 tbsp. plus 1 tsp. unsweetened cocoa powder
3/4 tsp. baking soda
1/4 tsp. kosher salt
1 1/2 c. granulated sugar
1 c. vegetable oil
2 large eggs, preferably at room temperature
2 tsp. pure vanilla extract
1 1/2 tsp. Red gel food coloring
1 tsp. cider vinegar
1 c. buttermilk
