INGREDIENTS
5 dried Shiitake mushrooms
2 carrots
2 cloves garlic
1 tablespoon minced ginger
1 onion
3 tablespoons vegetable oil (olive oil can be used)
1 1/2 pounds boneless stewing beef, cut into chunks
2 cups water , or as needed
1/2 cup light soy sauce
1/4 cup dark soy sauce
1/4 cup Chinese rice wine or dry sherry
2 – 3 whole star anise
1 tablespoon Chinese rice wine or dry sherry
2 tablespoons brown sugar
