INGREDIENTS
1 tablespoon  cooking oil
1 large onion, chopped (1 cup)
1 carrot, chopped (1/2 cup)
1 clove garlic, minced
1 15 - 16 ounce can red beans, rinsed and drained
1 14 1/2ounce can diced tomatoes, undrained
1/4 cup  snipped fresh parsley
1 tablespoon  snipped fresh basil or 1 1/2 teaspoons dried basil, crushed
2 teaspoons  snipped fresh oregano or 1 teaspoon dried oregano, crushed
6 dried whole wheat or regular lasagna noodles
2 cups  sliced fresh mushrooms
1 12 ounce carton low-fat cottage cheese, drained
1 cup  shredded part-skim mozzarella cheese (4 ounces)
1/4 cup  refrigerated or frozen egg product, thawed or 1 egg, lightly beaten
1/4 cup  grated Parmesan cheese
3 cups  coarsely chopped fresh spinach
2 tablespoons  coarsely snipped fresh parsley, basil, and/or oregano (optional)
