Recipe: Slow Cooker Pork and Cider Stew

INGREDIENTS
3 pounds boneless pork shoulder, cut into 1 1/2-inch cubes
1 teaspoon kosher salt, plus more for seasoning
1/2 teaspoon freshly ground black pepper, plus more for seasoning
3 tablespoons canola or vegetable oil, divided
8 ounces peeled fresh pearl onions (about 20)
1/3 cup all-purpose flour
1 cup apple cider or unfiltered apple juice
2 cups low-sodium chicken broth
1 tablespoon whole-grain mustard
2 teaspoons dried thyme
2 teaspoons dried sage
1 bay leaf
8 ounces medium red potatoes, quartered
4 medium carrots, peeled and cut into 1-inch pieces
2 medium apples, peeled, cored, and cut into 1-inch pieces
