INGREDIENTS

1 medium onion, chopped
2 medium carrots, peeled and chopped
2 stalks celery, chopped
3 cloves garlic, minced
8 cups low-sodium chicken broth
1 teaspoon fresh thyme leaves
1 teaspoon dried oregano
kosher salt, to taste
ground black pepper, to taste
1/2 cup white rice
3 cups chicken, cooked and shredded
3 large egg yolks
juice of 2 medium lemons
dill, freshly chopped, to taste, for serving
lemon wedges, to taste, for serving
