3 pounds medium potatoes, peeled and quartered
12 cups water, plus enough to cover the potatoes, divided
1 cup all-purpose flour
3 large eggs, lightly beaten
2/3 cup dry breadcrumbs
1 teaspoon salt
1/2 teaspoon ground nutmeg
***For the sauce:***
1/2 cup butter, cubed
1 tablespoon onion, chopped
1/4 cup dry breadcrumbs
